If you install the Beta MS Office2007 Suite, there an application called OneNote and this time it comes -as companion to the PC version-, a mobile version that runs on your Windows Mobile device.
I have been using OneNote for long time on daily basis. It is a very handy app to take & organize notes, unfortunately still very unknown to the public.
